I’ve been cooking up soups lately. So in honor of RD day, I thought I’d share what’s been going on in my kitchen.
First up, that hot and sour soup video that’s been going around… did you catch it? I followed the recipe (without measuring of course) as far as the ingredients and it’s a keeper! You can check it out here.
Also, I made my butter beans and kale. This is a favorite I got from a good chef friend a couple of years ago. Not exactly a soup, but with a little more stock it could be.
1 pound butter beans/large lima beans
enough water to cover the beans
2 Tbsp Better Than Bouillon
1 Bay leaf 2 Tbsp oil
1 onion chopped
4 cloves garlic chopped
Pepper to taste
1 bag baby kale
Soak beans per package directions. Saute onion and garlic in oil. Place in crockpot and add beans, water, bay leaf and bouillon. Cook in crockpot overnight on low. Beans will be tender in the morning. You’ll want them to continue to cook until creamy. If there is excess water (soupy) remove about 2 cup of the water. Adjust seasoning with more bouillon and pepper if needed. Turn beans on high and cook another 2-3 hours until creamy. Turn the beans off and add kale. Cover and allow the residual heat to cook the kale for about 5 minutes. Serves 6.
This one has been a favorite for years – Black eyed pea chili. Basically just substitute black eyed peas for meat in your favorite chili recipe.
3/4 package of dried black eyed peas
1 Tbsp grapeseed oil
1 onion diced
2 cloves garlic, minced
Enough water to cover the beans (6 cups or so)
2-3 Tbsp Better Than Boullion
1 Tbsp cumin
1 Tbsp chili powder
Salt/pepper to taste
1 can roasted tomatoes
Soak beans per package directions. Sautee onions in oil until tender. Stir in garlic and sautee until just starting to soften, about a minute or so. Add water and beans. Cook beans until just starting to get tender, then add Better Than Boullion, spices and tomatoes. Cook on medium heat until beans are done. Feel free to add chunks of avocado, corn, cheese… be creative. Serves 6.
