You need this salad in your life. Simple, very nutritious, beautiful… what else could you ask for?
Wash and steam 4 BEETS FOR 15 minutes or until tender. (Save the beet greens for a wonderful smoothie.)
Cool, peel and slice beets.
Peel and thinly slice 1/2 red onion.
Combine 6 T olive oil and 3 T red wine vinegar, salt and pepper.
Combine all ingredients and chill. Garnish with crumbled goat cheese or feta and chopped fresh cilantro or parsley. Delish!
did you wait til after you cooked the beets to reomve the skin? if so, i find it works well to skin them before you cook them at all. I just use a vegetable peeler which works great and make your hands look like you ran from a vicious crime scene 🙂
Yes I peeled after cooking and yes my hands did look like that. LOL!
